Spare ribs


Got a question I hope you all can answer. What all kind of pork ribs do you all cut?
I do the regular spare ribs, country style, and a New York style spare rib. I seen this on Emeril's show one time. His ribs that he used one time were cut off of the lower end of the loin. Almost like thick rib chops but with the top corner of the bone cut off. These sell really well for me during the Summer months. I sell a lot of pork cuts (family packs) during Spring and Summer. Ribs, chops, steaks. etc. A lot of campers come through my shop and I try to put out a big variety for them.

I sometimes make ribs out of the sirloin end, i don't know if that is what u are talking about but from what you are describing it sounds like country style that we make here. We had center cut chops on sale this week and we started getting hung with the ends so in our store ribs sell pretty well so we started making family pack ribs out of the sirloin end.....

I make loin end chops. Usally get about 6 if sliced 3/4 in. then sell them as savings pack

I sell Regular spare ribs, Sweet and sour spareribs, Sparerib brisket strips, St. Louis, Rib tips, and Riblets
