Are able to set up a small demo table close to your meat case ? demo them.

you might be able to get your wife some part time work like I use to ( wink ) I use to do stuff like this and get the company to pay my wife to do it for 4 hours a day on week ends

what about doing up a small batch, and passing them out yourself as you go out front'

If you don't get rid of them, you got your dinner ready ( wink )

Use breast meat, demo it and merchandise it as a 'Low-fat' alternative to your pork based sausage. Think about full margin.

Hey squirrel! When I make them for myself I throw white and dark meat with the skin in the mix. I make a chicken chipotle, spinach feta, hot italian and a sweet italian. Artichoke and roasted red pepper is really good as well. Had a hard time selling them though. When we make them at the store we only use breast meat. Too dry for me. But health minded customers buy the heck out of them.

I believe I am the one that originally posted the chicken brats with cherries....when I did a demo in them I couldn't keep up with the demo lady and I had an automatic stuffer!!! Use bnls thigh meat...breast meat makes it too dry!! Push the use of making out of chicken that alone will sell to the health minded people!!! they don't need to know exactly what part of the chicken was used!!!!

Good luck with it....I was a huge sucess when I did it...wish I could do it now, but no stuffer in store :(

make chicken bratwurst....use canned marchino cherries (juice & all) for about 25lbs it will take 2 cans of cherries!!

good luck they are awesome!!  I am the original poster of that recipe!!

invented them about 10 years ago....they kicked butt in my store

irish squirrel when I do chicken sausage I do 60% boneless shinless thigh meat and 40% boneless skinless breast meat

after that seasoning chicken sausage is just like pork sausage
