Brisket grades


A visitor asks:

"Hello, my question is regarding the grading of briskets. I'm aware of the different grades, select, choice, black angus, prime. But when the cattle gets its grade, is the brisket even part of that grading process? Just wondering because I smoke a lot of briskets, and have to choose regularly between all the different grade/prices"

The beef brisket is not a factor in determining the grade of the carcass. Marbling is the amount of distribution of small fleck of fat within the rib-eye muscle between the 12th and 13th rib.  It is the last thing a steer puts on.  It is also the first thing an animal loses if feed is cut back.  Quality grades are important in determining carcass value.

Here is something of interest concerning the price of beef briskets. Because the grade-roll or shield is run down the carcass from hind-quarter to front-quarter you will not see a grade shield on the brisket. Therefore, one doesn't really know if they are getting choice or select. A shopper could buy a select grade brisket and get charged at a choice price!

Although if you look at it in another way a select grade briskets will yield more meat than the choice. So I guess it could be a catch-22 situation.

fdarn go do that free course it will explain grading on beef and lamb grades are just a marketing thing by usda paid by the processer food safety overseen by usda is paid by taxes so 2 different things.

Overall grading is done where coal said because it gives an indication of all the other muscles in the carcass because thats a good indicator of the other muscles . im sure it would be impractical to feel up every bullock or sheep but im sure plenty of farmer would if they were wearing stockings

Hey Irish, obviously the objective for feedlots and small private rangers is to feed to Choice. I mean if they miss the Choice grade it could mean as much as a $60 to $100 per head less money. Many cattle are purchased standing however, more and more feeders are switching to "On The Rail" or (yield and grade) selling. On The Rail selling is great if you know what you have; then the packer will pay you the value of your cattle determined after the carcass is graded. 

So a smart seller will send his best cattle to be sold On The Rail and the not so best will get sold standing. They feel they do better overall with this plan.
