Safeway beef shanks with the bone pre sliced (have you seen this before?)


Safeway beef shanks now come in like this. One per package, with bone pre sliced. Unevenly, and sometimes not completely through. What do you think of that?

I think they are trying to find another way to eliminate the need for meat cutters, but not quite getting it right.

 I think they for sure would like to eliminate band saws and all but one person per shop. Maybe have no meat persons at all. Just let a grocery person open boxes now an then. 

In my opinion, the best way to cut beef shanks is to knife the meat first and then finish the bone on the saw (not the reverse)

We don't even have boneless blades for our saws anymore. We have a roto chopper where you put the loin inside, close the lid, enter how thick you want it cut, then push a button.

The one we have is boneless, it's a horizontal meat chopper made by biro. I'm pretty sure they make bone-in ones also, it has a serrated blade. The machine is pretty much dummy proof, which is good for our stupid night guys to use.
