sales per man hour or sales per earned hours is


I ask mainemeatman today to do me a sales per man hour because I didn't have time to hunt the one we had on the old site, it has covered it well  THANKS Mainemeatman

sales per man hour or sales per earned hours is

 

total sales divided by number of hours  used/scheduled = spmh

 

say the dept does 40,000 in sales and uses 220 hours

40,000\220=182 sales per man hour

 

many factors in this- if a service case, the spmh would be less

if all self service and pre-pack chicken, then spmh could be 220-300 depending on whats on sale

if picnics or roasters are on sale (low labor, high sales) then spmh would be higher-if clods are on sale-for london broils real cheap-then spmh would be lower )more hours used for amount of sales)

 

is thier one sales per man hour number? not across company lines-within companies yes

in independents, if you get 150-180 spmh you are doing well (bulk chicken)

say projected sales are 25,000, how many hours should be used?

25,000 divided by 150=167 hrs

if a high margin dept 35% plus you can lower the spmh  (many marinades/specialty items)

sales per man hour is also called process dollar in some chains

 

also,  you can figure 10% payroll if spmh doesnt work for you(12% if  full-service) in an independent

 

25000 sales x 10% = 2500 total payroll dollars for the week

total weekly  payroll dollars divided by sales = payroll   percent
