In the day, you came in on Fri morning and the boss would say " CUT THE COOLER " and by clock out time the rail was empty I have worked some markets where it would take 5 to 6 whole beef loins to set the counter, 8 to 10 whole beef ribs to set up

That takes some skill, huh? According to the Bureau of Labor Statistics they make the highest hourly mean wage for meat cutters...if you want to call them that. http://www.bls.gov/oes/current/oes513023.htm#nat
