I like this site, lots to learn even for us pros. you right cowboy, get use to using the mouse and it opens new doors. never seen that type of progam before.

I went threw EVERY part of this link today and some parts more than once lol . Thank you Leon , watching the videos helped me see ALOT of new things to try out and ill get alot of practice cause I can hunt pig and goat here year round and there is never a shortage of people who want to buy the meat for smoking or what not and they have no cares what the cuts look like as long as its fresh and clean . Have already talked to a few of them and their even willing to let me practice on meat they have in their freezers already , I cant wait ! Thank you again.

 I have a question tho : In those videos it looked as if the guy was using a Filet knife ? I have no clue what kind of knife to work with for cutting like that I usually just use my hunting knife or my skinning knife witch I keep both sharp enough that when I run either across my arm with little to no preasure hair will fall . Also is that a miniture Bailing hook ? Sorry for the retarded questions.

well glad it's helping you. BEFORE long we may have you running your own shop lol

you may have you a smoke meat business or be cutting meat for the BBQ lovers.

I would say that the knifes he is using is a 6 and 8 inch boneing knife. my old eyes don't see that well any more but those are the ones we use to break beef or pork. or as many meat cutters do, we use a 10 inch breaking knife. In my younger days, I kept a 6 inch curve boneing knife, a 10 inch breaker and a 12 steak knife on my side all the time, used a meat hook ( what you called a bailing hook ) only to break hinds

myself in the past 20 years or so I have used only a 10 inch knife but that due to I didn't have to break any beef down. An the type of meat we use to have to bone out isn't there any more with the box beef. I used the 10 to bone or steak with.

if you going to get into making sausage, he carrys a lot of seasoning to. I will have some video's on the site before long that will show you what to do with the primal cuts.
