have many of you cut this ??


This is label a Honeymoon Roast

I never have heard of it till a few months ago, but this doesn't look like the ones i've seen on video's. the ones I've seen are more flat.

Whoa! I'm not sure I've ever seen one that looks like this! I've seen culotte called honeymoon roast/steak. This looks like it's got rib meat wrapped around a clod heart. Weird. I bet it's good though.

Honeymoon roast? Bonein? Always thought it was from the sirloin cap. Will what do I know.

The fatty part in the lower section of photo looks like a boneless plate, but what the heck is the lean part above? It all looks like two separate pieces that don't belong together. Could that be a brisket and plate boned and tied together? But brisket normally isn't marbled like that, especially at the 9 O'clock point of the photo. It could be a small end ribeye with a boneless plate tied to it. But those two things shouldn't be cooked  together. I'd really like to see it from a better angle (directly above). Can't figure out why it would be called honeymoon. Don't really think plate meat belongs on a roast unless its a pot roast. The lean center part almost looks like eye of round except for that fat at 9 O'clock position.

 I don't have any idea what the lean part is. If I had it in hand, I think I'd know for sure. I'm almost positive the fatty part is from a boned out plate. The area that would be spareribs on pork. You don't really see those anymore unless you're breaking beef.

Bad angle. At first glance it just looks like bnls ribeye rst! It does look like rib plate meat on outside .

 I think so too, but who would tie plate to eye of round? I'm not sure that's a serious cut of meat. Maybe it's someones idea of a joke.

A question for mimeatguy,
I noticed on the photo that you have a smoke oven. Please tell us what goodies you make and smoke, with some instructions on curing and smoking times and temperatures.

I pretty certain that comes from Paulina's Meat Market in Chicago. Hell, I'll give 'em a call and ask just what in the heck it is I'm looking at!
