what matters in meat cutters profession is it different meat names or knowing of skilled position cuts


This applys mostly to retail meat cutters with our steaks,lions and eye ribs.

to me both, you don't want to be a professional cutter and someone ask you for a steak and you have to say I've never heard of it.

 

If a customer ask you to cut any of these steaks, what cut would you be cutting her ?? Beauty Steak, Market Steak, Spencer Steak ?

I think you right, both. I know I been in the business awhile but some times older people ask me for steaks i've never heard of. a few times I've had to make a fast phone call to a older meat man friend of mine to ask what the hell are they talking about.

it is funny all these years we made up our own names for the cut of meats and you look on the diagram of beeg from the beef markets you don't see such names.Like cowboy steak,you remember where that comes from.

haven't cut a cowboy in years, when we did it was a bone in rib steak with a long rib bone in it trimed back so you could hold it by the bone. that the same one you cut?

any one remember swift proten beef, you had a lot of differ names come out of that.
