Do any of you go back to the time we cut all Hams by knife and hand saw.

 

Ham had to be angled to get your cut.

 

 

Had to take a two to two 1/2 inch Ham Roast out of the center.

 

 

Cut 1/2 inch Ham steaks by knife and hand saw.

 

 

Some were split down the bone to make a boneless half

 

 

only time you used the power saw was to cut 1/5 slice Hams, slice up butt and shank portions or halfs to tie back and split hocks.

 

 

Another question here, How long has it been since you even seen a Center Cut ham Roast.

thats not that old i remember doing that..lol..........we would get in whole smoked legs and un smoked and take customer orders.....

we call it griller ham,it is prepared with a skin cured on top with the bone in side it , injected after then cook it and again roast it on the oven.

we only make it during chrismas season and on new years eve.
