I cut it almost exclusively not too long ago
It was awesome
Had great marbling

thats about the only kind we cut...our store is trying to convert over to strictly angus beef and that black caynon is just about all we get....along with others but mostly black caynon

Not trying to change the subject but has anybody seen beef called "American Reserve" choice in white boxes? I got 8 cases of short loins and they look great but they are turning quick but they aren't short dated?

no, no problems at all....actually some of the best stuff ive seen in quite some time....some of the stuff we get is in is garbage compared to that black caynon....

i had some in white boxes....don't remember the name of it exactly but yes it didn't hold up but maybe 1-2 days max....had short loins, and ribeyes....our company called where we got them from and said never deliver that crap to us again!

The only white boxes we get are wienstien and american reserve with the later being the worst-but we were getting some stuff labeled Packerland and it was some really rough stuff.

Packerland has better pork than beef, in fact I think most of it, beef & pork is big stuff

I have cut this beef, they would send it in place of our Angus Pride beef if they did not have it in the warehouse....nice beef...  we never had any problems with this or the Angus Pride......

I now cut certified HEREFORD beef!!!   I grew up raising and showing hereford cattle, so i am liking the new beef, even though herefords carry more fat in there chucks...

Thats really neat Tia, didnt know they had certified Herford. I grew up in the 4-h raised lambs though. LOL But I remember when the herfords starting being replaced by those monster big black angus. But I always like the local raised Herfords.

The Black Canyon is pretty good but I really prefer the CAB better . The CAB just seems more consistanty good and importantly to me gives about an extra 2 day shelf life over the Black Canyon in my experiance.

 We got a few cases of mock tenders from Black Canyon.

I agree that CAB is excellent beef. My previous place of employment has been selling it for maybe 15 years.
