definitly the ground chuck. its always the most popular. the family pack strips are disappointing me. just not moving fast enough for me. boneless breastis going well, ribeyes are going well, short loin is just stalled i don't get it. its perfect grilling weather. and they are nice ones too. i think they just want the cheap stuff.

I made about 240 lbs of ground chuck today (4 luggars) 20%, 90 lbs of 15%, 90 lbs of 10%,  45 lbs 05%, 25 lbs "grass fed" HB. 30 lbs ground lamb. 20 veal, 30 pork.

About 50 lbs of fresh patties. Half were lean, half were "chuck".

Left at 4:30 and possibly they needed another grind in the evening.

We use no tube meat at all. It's all our own trimmings.

Baby back ribs were selling great and ALL steaks. Lot's of chicken too.

We make 9 different kinds of gourmet burgers, the burgers with the cheese and toppings mixed in.
Plus Chuck Patties

I have never had to order Chuck trimmings to make patties until now
I have always had enough from my trimmings to produce what I needed

Last week I ordered 30-80lb cases of chuck trimmings to combine with our shop trim just to have enough to make the burgers we needed
