It is thus seen that the invention provides for an apparatus and a process for separation of beef, pork and lamb from bones. The process separates the meat from the bone, cleans the separated meat pieces with heated water with minimal loss of meat flavor, and provides for a recycle of the heated water. Many variations will undoubtedly become apparent to one skilled in the art upon a reading of the above specification with reference to the drawings. The process may be adapted to the source--beef cattle, pork or lamb--and size of bones being processed. Hammer mills or crushers may be added to the front end of the line. Hole sizes and slot sizes are adjusted for beef, pork, lamb or other meats.

Beef seems to be a little harder than pork. I use meat hook, and my fingers, or like masteryeti said, a towel. Some people use their apron, but I think it looks bad to do that in front of customers. I cringe with embarrassment when I see that.
