I'd love to actually see him tie those weenie knots on a prime rib. Sounds good and all, but in practice, this video fails. Horribly. A towel is knot a piece of meat.
And when tieing a bone-in roast, it is better to tie over part of the bone so you can cut it and it remain tied. Particularly prime ribs. Ideal for service cases displaying a whole rib roast where a customer only wants x amount of bones. You can replace what's left and knot have to retie it.

I watched this video with my wife. I started laughing when he was making the knots. My wife asked "What are you laughing at?" I said "That ain't how you tie a roast!". She just looked at me and said "Well at least HE can fold a towel. You can't even do that!" I was laughing so hard I almost fell out of my chair!
