How about caul fat? I don't know if that's considered genuine fat. Caul fat is the fatty membrane which surrounds internal organs of some animals, such as cows, sheep, and pigs, also known as the greater omentum.
When our customers want pork fat, we just save fat trim from loins and Boston Butt. I haven't seen genuine back fat in a long time.
