I agree with Big Beef. If it's worded in the ad as Bacon wrapped filet, then you should be using tenderloin. If advertised as bacon wrapped steak or loin, then using the other cuts wouldn't be as big a deal.
thats not very pretty. does he have to cut those with a saw? looks like it was cut with a boning saw with all that dust on it. i actually got a special order to take care of friday.. i got open a whole round season the inside and the outside then STITCH the seam back together. still trying to figure out how i am going to do that
Use a larding needle. Run butcher twine through the eye of the needle, then run the needle through the muscle in a standard stitch and seam pattern or however you like. It takes awhile but it's worth it. It can look really sweet and going that extra mile will guarantee that customer will be coming back again and again. Hope this helps.

use your wifes sewing machine you will get a better stitch
Then on the other hand she may spank your ass for that, so if all else fails, do this one, use a long knitting needle and a old thin blade boning knife you got around and punch your holes and pull the string through the hole.Being the meat artisit you are, NO PROBLEM ( wink )
On the item of Bacon wrapped filets, I went ahead and ordered some mock tenders for Friday. I'll try them. I agree ,they should have worded them a lil different. I made some out of a bottom round this morn. Didn't look too bad. Big Beef, Scouting has been in my life a good while also. My son is an Eagle and I've been a leader for a number of yrs. Great times!
Here's another good one. Every week we have a colored ad which goes into the area papers. In our meat section, we have whole pork loins advertised with a pic of a bnls loin. Some weeks we get a kick out of some of the pics they put in there. Some of them don't even look like what they're supposed to be.
today i had to make changes on the ad set up for 2 weeks from now..alot of mistakes in there..calling ground chuck 93% and putting center cut chops on sale for more than the regular price. i am like who comes up with this crap. i said you got to fix this and this and this and this before you send it to the newspapers

I don't understand what's so hard about getting the ad 100% correct 99% of the time. With the exception of the family market I started at, this has been a problem my whole career. Yes, I can easily understand the ad people not knowing their cuts of meat. But who approves the ad? Shouldn't (doesn't????) a supposedly responsible person from each department check for errors before it goes to the printer? Some big mistakes are things like advertising crab cakes for $2.99 per pound when it should be $2.99 EACH. They are small. Maybe 4 ounces. There's no way you can sell them for $2.99 lb. No matter what the mistake, all they have to do is post an "oops we goofed" notice on the front window. The ad people definitely have a much lower standard of excellence than the rest of the store.
