what is that thing in the pork butts


someone help me out here..what is that nasty little green thing in the end of every pork butt. I always made it a point to remove that for years but never knew what it was. someone once told me its gland but i don't think thats right.  I was explaining to someone today that you should always remove that its not meat. but I didn't know what to call it..thankfully she didn't ask what it is or i would have looked stupid.

yes it is a gland....when I was being taught sausage making, the old timer that was teaching me told me that it was a gland and that if you leave it in the sausage it can cause it to have a sour taste....always remove it when making sausage....I also always remove it when cutting butts....

If you're pork is good quality and fresh, it shouldn't be green but grey instead.

yep yep gland...lol...they will very in colour depending on the health of the pig...anywhere from an almost transparent greysih colour like in beef...to almost black/bloody...

I concur - definately a gland. I remove them whenever possible - for example: If you're ever opening up a BRT lamb leg, most of the time it will have two large fat chunks in there - one in each side. Slice those in half and you'll see that greyish gland :) I remove both, I know there's a gland in one, but the other might not.. haven't checked in years - just remove em and toss :)

a gland that reminds me of a booger...sorry but they gross me out...I don't even like to touch my knife to it! EEEEk
