She's got the mentality and motivation, along with tiny hands, but I've got to break her of her household knife skills. So fa...

In my 45 years as a butcher, I’ve seen horrific things in retail meat markets. I’ve watched managers wash chicken in baking soda and Clorox. That’s right – Clorox. The chicken was so obviously spoiled that you could smell it. But they did it anyway, repackaged it and sold it as fresh. A very comm...

I searched for a long time trying to find meat information online for our trade - found a lot of sites that just gave information about meat cutting as it is used in the kitchen, but not in the meat shop. Then a friend at work found the Meat Cutters Club and pointed me towards it. I was skeptical, but I have...

We've all thought about it whether it be looking for a new hire, your peers, or development of a newbie. Sometimes it's when the person you're cutting with that has this habit or technique you can't stand. Think for a second about what traits you would like to have of the person as a whole, whether you're...

Well it is 1:30AM and I'm bored and can't sleep. Figured I'd share some personal videos of mine so you guys can get a glimpse at my day to day life. We don't really have an "Off-Topic" forums for stuff not related to meat, so I'll just throw them in here. Go-Carts (I am in the blue shirt) http://y...
